Dóldora, Other Wines, Moldova

Dóldora by Other Wines — Juicy Saperavi Red from Moldova

Dóldora is a juicy, spicy red wine from southern Moldova, made from 100% Saperavi — an ancient Georgian grape known for producing bold, full-bodied reds. But Dóldora takes a different path: gently crushed and cold soaked to keep things smooth, fruity and ridiculously drinkable. Cherry, black pepper, clove — and a name that means ""full to the brim."" It lives up to it.

Saperavi, but make it juicy

Saperavi has a reputation for being heavy and tannic, but Dóldora flips the script. The winemakers at Château Cristi — Constantin and Roman — gently crush the grapes and cold soak them rather than going for maximum extraction. The result is a red wine that's smooth, fruity and easy to drink, with just enough spice and structure to keep things interesting. Low intervention, aged in stainless steel, and absolutely packed with flavour.

From one of the world's oldest wine regions

Moldova doesn't get much attention in the UK wine world, which is a shame — people have been making wine there for over 7,000 years. Dóldora comes from the Valul lui Traian appellation in the south, where rolling hills, clay soil and the influence of the Black Sea create conditions that are genuinely ideal for grape growing. At £16, it's the kind of value that makes you wonder why everyone isn't drinking Moldovan wine.

A bottle with real main character energy

Dóldora works brilliantly with food — olives, ratatouille, spiced hummus, anything off the grill — but it's got more than enough personality to drink on its own. It's the bottle you open midweek when you want something satisfying without having to think too hard about it. Confident, fruity, zero pretence.

About Other Wines

Other Wines exists to put overlooked wine regions on your table. Co-founded by Gleb and Jack, they import directly from independent vineyards in Moldova and Uruguay, working with winemakers who use low intervention methods and have deep connections to their land. Their whole thing is proving that outstanding wine doesn't need to come from France, Italy or Spain — and that the best value in wine right now is hiding in places most people can't find on a map.

That's exactly the kind of thinking we're into at All Natty — brilliant wines from makers who do things differently. See all Other Wines at All Natty.

Also from Other Wines: Jumi-Juma, La Ventana, Balido.

When to open Dóldora

Tuesday night with a bowl of pasta. Saturday with friends and a cheese board. Sunday with a roast. Dóldora doesn't need a special occasion — it is the occasion. Try it alongside the Doom Juice Rouge if you want to compare two very different takes on natural red wine.

Frequently asked questions

What does Dóldora taste like?

Dóldora is juicy and fruit-forward, with ripe cherry as the star alongside black pepper, clove and a touch of spice. It's smooth with gentle tannins — much lighter and more approachable than most Saperavi wines. The stainless steel ageing keeps the fruit bright and clean.

What food pairs well with Dóldora?

Pretty much anything you'd want with a good red: olives, ratatouille, grilled meats, pasta, spiced hummus or a cheeseboard. It's also genuinely lovely on its own — no food required.

Can I get Dóldora delivered in Bristol?

Yes. All Natty delivers across Bristol (BS1 to BS16) the same day on orders placed before 2pm. It's £3.50 for delivery, or free when you spend over £40. We ship UK-wide too, with two-day priority delivery at £8.50 or free over £80.

What is Saperavi?

Saperavi is an ancient grape variety originating from Georgia — one of the oldest winemaking countries in the world. It's known for producing deeply coloured, full-bodied red wines. In Dóldora, the Moldovan expression is lighter and juicier than many Georgian versions, thanks to gentle winemaking and cold soaking rather than heavy extraction.

Is Dóldora a natural wine?

Yes. Dóldora is made using low intervention methods — gently crushed, cold soaked, aged in stainless steel, with minimal additions. It's vegan and gluten-free. The sort of natural wine that doesn't need the word ""natural"" as a caveat.
